The best part is that this is actually consistent with the mythological Thor. Myth Thor was also a big eater who loved feasting almost as much as he loved bashing in Jotunn heads with Mjolnir.

Having magical animals that resurrect after being eaten is practically a necessity when you have to provide feasts for thousands of hungry warriors every night, including Thor. The huge pig that is eaten in Valhalla every night had the same ability.
